Wholesome Lime Pork & Paprika Lettuce Cups!
A bit of Mexican meets Chinese cuisine with this super healthy and yummy throw together dish. This is great fresh and fun dish for casual entertaining as you can have each ingredient on its own plate in the middle of the table and each person tops their own lettuce cups up.
Gluten free, grain free, dairy free, paleo, additive free.
Recipe;
Serves 2:
– 300g organic pork, sliced into strips
– 2 tbs olive oil
– 1/2 tsp paprika
-1/2 tsp chilli powder
-1 lime, sliced in half +extra 1/4 for serving
– 2/3 cup chopped coriander
– 1 avocado
– 1 carrot, grated
– 1 cup alfalfa sprouts
– 4 iceberg lettuce cups
– Pepper & Himalayan salt
In a bowl place the pork strips, olive oil, chilli, paprika, salt and pepper to taste and the juice of 1/2 the lime. Mix the ingredients together.
Heat up a fry pan to a medium heat and add the contents of the bowl, tossing regularly until the pork is cooked through (about 5 minutes).
Mash the avocado with the juice of the other half of lime and salt and pepper to taste.
Last of all the fun part. Top your cups with the alfalfa sprouts, carrot, coriander, pork strips and guacamole. Drizzle with a bit of lime and enjoy!
