Walnut, coconut and maple pancake smoothie bowl
A soon as I woke up this morning all I could think about was how much I felt like a stack of grain free coconut pancakes with walnuts and maple syrup. Unfortunately I didn’t have time this morning to make pancakes so throwing together a pancake smoothie bowl in 4 minutes became my next best option.
Gluten, refined sugar and dairy free. High in protein, nourishing good fats and oh so very delicious!
Recipe:
1.5 cups organic coconut milk or if using canned coconut milk go half filtered water, half coconut milk
1 handful of activated walnuts
1 heaped tbs maca powder (optional)
1 scoop natural protein powder
2-3 tbs pure maple syrup
1 tsp vanilla extract
Pinch of Himalayan salt
8-10 ice cubes (the more ice cubes the thicker the smoothie)
+ toppings of choice (I used shredded coconut, walnuts and drizzle of maple syrup)
Blend the following ingredients together. Pour into a bowl and top with chosen extras. Now your have time to sit down, relax and enjoy your express pancake smoothie bowl.
