It can sometimes be hard to get in your greens in Winter when options such as warm strews, soups and many not so healthy winter comforts sound so much more appealing.
I love this recipe as it takes under 8 minutes to make, is full of nutritional nourishment and is so versatile. Throw it on the side of your plate with grilled chicken, toss through chickpeas or fresh salmon pieces (my favourite) or bring it along to BBQ’s/ picnics.
Green beans are best known for their high antioxidant content and are a rich source of dietary fibre.
Recipe:
Serves 2:
4 large handfuls of green beans
1 cup walnuts, preferably activated
1/3 cup raisins
2 tbs soft goats cheese
2 tbs fresh lemon juice
2 tbs avocado oil
Top and tail the beans then blanch them for 4 minutes in boiling water.
Drain the water and toss through the goats cheese, avocado oil, walnuts and lemon juice. Season with sea salt and pepper and serve as a warm side dish or toss through meat, fish or lentils for a light and healthy meal.
