I would have to say I love Sunday morning pancakes. Now living a gluten free lifestyle I had to find an alternate. This is my favourite pancake recipe that’s completely GUILT FREE!
It contains nothing but goodness for our bodies to absorb.
– 1/2 mashed banana
– 1/4 cup milk (I used almond milk)
– 2 eggs
– 1/3 cup ricotta cheese
– 1 tbsp maple syrup or preferred sweetener
– 1/3 cup flaxseed, ground
– 1 tbsp coconut flour
– 1 tsp baking powder
– 1 tsp cinnamon
– 1 tsp vanilla extract
Mix all ingredients together. To make thin pancakes (like in the picture), alternatively blend the ingredients together. Pour into a pan on medium heat. Flip once bubbles appear on top of pancakes.
Once ready, top with banana, ricotta, cinnamon and maple syrup!
