Chia Breakfast Parfait

Ok yes the chia puddings are a bit of a craze at the moment but they also have good reason to be in the spot light.

1. Chia seeds are a great source of protein, omegas, fibre, calcium and vitamin C and are gluten free.

2. They are so easy and quick to make.

3. A guilt free indulgence.

4. Will leave you feeling full and satisfied.

5. There are so many variations to the chia pudding/ parfait. Adding different superfoods and fruits allows you to get creative and enjoy a nutritional boost.

Here is a basic chocolate breakfast parfait recipe full of magnesium, protein, calcium and many other health benefits to start your day with a healthy indulgence and energy hit.

Superfood start 101!!

Serves 1

Recipe:

3 tbs chia seeds

1 heaped tbs cocao powder

3/4 cup almond milk, oat or coconut milk

1 tsp nativia or honey

3 tbs pot set natural yogurt

1/4 cup shredded coconut

1-2 tbs cocao nibs

1 tsp nut butter

Combine together the chia seeds, milk, cocoa powder and nativia in a bowl. Allow to stand for 5 minutes while the chia seeds expand.

In a glass add 2 heaped tbs of the chia pudding, then top with a layer of the shredded coconut and a tbs of yogurt. Repeat this process adding the rest of the chia mixture, shredded coconut and then yogurt.

Last of all top with your nut butter of choice and cocao nibs.

Enjoy!

This recipe can also be made the night before and enjoyed pre made the next morning or in a jar for on the go.

A layer of berries, banana, pepita seeds etc can also be a great addition.

Raw cocao fudge balls!

This was meant to be the recipe for my cocao nut bliss balls featured in my holiday snack preparation post. Some how however I have managed to loose my recipe! With the ebook under way I have scraps of paper with scribbled recipes all over the place!

I decided to make some more so I could give you exact measurements of ingredients, but got a bit off track as per usual and have created a new and improved version – The raw cocao fudge balls!

These chocolatey fudge balls are heaven and full of antioxidants and omega’s.

Recipe:

2 cups of fresh medjool dates

3 heaped tbs cocao powder

1 tbs coconut sugar or rapadura

1 tbs chia seeds

1 tbs vanilla extract

2 tbs tahini or nut butter or 1 of each

1 cup raw nuts of choice (I used brazil nuts and walnuts)

pinch of himalayan salt

1 tbs maca powder (optional)

Blend all the ingredients together on the highest speed for about 1-1.5 minutes or until all ingredients are combined into a moist dough.

If using a thermomix: speed 9, 1 minute.

Roll dough into balls and then roll them in your favourite topping. These balls are great rolled in shredded coconut. Other options include; cocao powder, chia seeds, goji berries, sesame seeds.

Enjoy with a cup of herbal tea!

Beginner smoothie guide

I had a request recently for a beginners smoothie guide, particularly regarding breakfast smoothies. Smoothies are fantastic as a breakfast option as you can pack them with so much goodness to keep you energised all morning.
Beginners smoothie guide:

Pick at least 1 ingredient from each number + an ingredient with an astrix (*) & blend with a few ice cubes.
1) Base: 1 cup
a) cow milk, goat milk, almond milk, soy milk, quinoa milk, oat milk.
b) filtered water, coconut water (sweet taste & full of electrolytes)

2) Protein: to stabilise blood sugars & boost metabolism. Invest in a good natural protein powder & use recommended serving. I use a vanilla bean protein that contains nearly no sugar- avoid sugars in morning.
3) A good fat/omega: for boosting metabolism in morning & absorbing nutrients + good skin/hair/nails/brain function
Choose approximately 1 tbs of 1 of these options:
– Almond butter
– Coconut oil/milk
– Macadamia oil
– Omega oil
– Hemp oil
– Walnut oil
– Almond meal *
– LSA (linseed, sunflower seed, almond meal)*
– Avocado

4) Extras: choose as many as you like to create the flavor & nutritional value you desire.
– cocao powder
– maca powder
– bee pollen (sweet + stabilises blood sugars in morning)
– coconut shreds or flesh *
– 1/2 banana* (I peel & cut in half, glad wrap & put in freezer for convenience)
– fresh or frozen berries *
– paw paw *
– acai powder
– lemon/lime
– cinnamon (great metabolism boost & blood sugar stabiliser)
– baby kale or spinach leaves
– spiralina powder
– chlorophyll liquid
– chia seeds
– cooked fresh beetroot *
– cooked pumpkin (nice with cinnamon & vanilla protein powder) *
– yogurt (Greek, natural, goats or sheep- no sugars or artificial flavors)*
A great and easy combination is 1/2 banana, vanilla protein powder, chosen base (I love half coconut milk & half almond milk), cinnamon & chia seeds.
