Super Greens, Nut & Seed Porridge Bowl!

I know I know it’s not the most visually appealing of meals…. however adding greens to my breakfast seriously does motivate me to eat healthy for the rest of the day! So here is a super greens, nut & seed porridge bowl to have you energised, positively fuelled and making healthy food choices!
And it tastes better than it looks, I promise ?

If your new to green powders start small with maybe 1/2 a tsp as its mighty strong stuff!!

Super Greens, Nut & Seed Porridge Bowl Recipe:

1/2 cup wholegrain oats

1/2 cup filtered water

2/3 cup almond milk or milk of choice

3 tbs chia seeds

1/3 cup mixed seeds & dried fruit (I used sunflower seeds, pumpkin seeds, raisins)

1 tsp of a super greens powder

1 tsp raw honey

Pinch of himalayan salt

In a small saucepan mix the water, milk, salt and oats on a high heat until they come to the boil. Then turn down to a medium heat and simmer for 5-8 minutes until the porridge thickens.

Stir through the chia seeds, other seeds, fruit and honey.

Last of all take off the heat and stir through the super greens powder.

Mix though a little more water or milk if required.

Enjoy while its warm..

Immune Boosting Turmeric & Ginger Porridge!

So you may have heard about the trending super spice turmeric and all it’s health benefits, but have you tried Turmeric & Ginger Porridge before? Well winter is the time to really be upping your intake of these medicinal spices to boost your immunity, metabolism and improve your circulation.

This warming immune boosting turmeric & ginger porridge recipe is a favourite in winter. I find it so incredibly filling for long mornings in The BareVitality Studio and effective in keeping my system strong against winter bugs. The ginger, honey and cinnamon work with the turmeric to really boost your immune system.

I have created this recipe for myself to really enhance my nutritional profile, however feel free to use quantities suited to your taste preference for less of a kick!

Dairy free, refined sugar free, vegan, nut free with the option of Gluten Free!

Immune Boosting Turmeric & Ginger Porridge Recipe:

Serves one:

2/3 cup of Wholegrain Oats or GF Oats

1 Tbs Chia Seeds + a little extra for topping

1 Tsp Turmeric Powder

1/2 Tsp Cinnamon

1 Tsp Grated Fresh Ginger

1 Cup Almond milk or Dairy Free Milk of choice

1 tsp High Quality Raw Honey (I used a raw tea tree honey)

1/4 cup Filtered Water

1/2 tsp lemon rind (optional)

Shredded Coconut for Topping

In a small pause pan on a medium heat combine the almond milk, water, oats and chia seeds + lemon rind if you choose. Stir continuously on a light bubble until the liquid absorbs and the oats are soft and creamy!

Take off the heat and stir through the turmeric powder, fresh ginger and cinnamon powder. Scoop into a bowl and top with the coconut, honey and extra chia seeds.

Enjoy while its hot!

Caramelised Banana Oat Muffins

These delights are adapted by a recipe from Pinch Of Yum!

They are wheat free, refined sugar free, low GI and super yummy.

Recipe:

3 bananas, peeled and sliced

1 cup organic oats

2 heaped tbs coconut flour

1/2 tsp nutmeg

1/2 tsp cinnamon

1/2 tsp Himalayan salt

2 tsp baking powder

1/4 cup organic butter, melted

2 eggs

3 tbs raw honey

2 heaped tbs Greek Yogurt

Topping:

1/4 cup oats

1 tbs organic butter, melted

1 tbs honey

Preheat the grill on a medium heat. Grease 10 muffin cases with butter or coconut oil or use muffin cases.

Place the banana slices under the grill and bake for 10 minutes until the bananas are caramelised (soft and golden brown).

Meanwhile in a food processor or high-speed blender, grind the oats into a rough flour consistency.

Preheat the oven to 200 degrees celsius.

In a large bowl combine the oat flour, coconut flours, salt, spices and baking powder.

In another bowl roughly mash the caramelised banana. Then add the melted butter, honey, yogurt and eggs. Pour the wet ingredients into the dry ingredients and fold through until thoroughly combined.

To make the topping mix the oats, butter and honey together.

Spoon the mixture into the muffin cases so they are around 3/4 full. Top each case with the oat topping and then place the trays into the oven.

Bake for 10-12 minutes or until golden brown on top.

Allow the muffins to cool for 5-10 minutes before taking them out of their cases.
