I know my last recipe was chocolate based as well, however I believe you can never have enough chocolate recipes so here you go…
Earlier this week Rawspirations Chewy Choc Chip Fudge Cookies caught my eye on instagram. I didn’t have all the ingredients at the time so did a bit of swop and adapt and these Choc-Nut-Fudge Grain Free Cookies were the end result.
These grain free cookies are the BEST dipped in a cup of herbal tea or served with a fresh green glass of juice. Thanks Rawspirations for the inspo!!
This recipe is also another great little Christmas gift idea! Bake up a few batches and wrap 5-6 cookies in cellophane, tie with a pretty ribbon and attach a Christmas tag- too easy!
Choc-Nut-Fudge Grain Free Cookies Recipe:
2/3 cup almond meal
1 tbs peanut butter
1 cup raw cashews
6 medjool dates, pre soaked
1 tbs cocao powder
1 tbs maple syrup
2 pinches salt
1 tsp vanilla extract
1/4 cup chopped high quality dark chocolate of choice
Pre heat the oven to 180 degrees celcius.
In a high speed blender or food processor combine the pre soaked dates, peanut butter, maple syrup, cashews, vanilla and salt until smoothish.
Next add the almond meal and cocao powder on a low speed, wiping down the edges regularly.
Last of all fold through the chopped chocolate.
Roll the mixture into balls and place on a sheet of grease proof paper on a baking tray. With your thumb or the back of a spoon, push the middle of the balls down to create a biscuit shape.
Bake for 5-10 minutes, before allowing to cool and harden. The baking process is more to help set the biscuits than bake them.
