These are the type of brownies that everyone else in the house refuses to believe are healthy because they taste so indulgently naughty.
The type that you don’t dare to put in a see through container and are hidden very stratigiclly at the back of the fridge where no one will look.
These are brownies full of antioxidant goodness, essential fats, protein and will not cause a fluctuation in blood sugar levels.
The type of brownies that you just can’t resist but to have one with breakfast- yes guilty!
Recipe:
1 1/2 cups almond meal or hazelnut meal (I used half half)
1 cup cocao powder
1/2 tsp himalayan salt
1 1/4 tsp baking powder
200g or 1 cup melted coconut oil, ghee or organic butter (not dairy free)
1/3 cup raw honey
2 tsp vanilla
1/3 cup nut butter or organic sugar free chocolate spread
3 eggs
1/2 cup goji berries
Preheat the oven to 200 degrees. Line a slice baking tin with grease proof paper and grease the sides with a bit of coconut oil/butter.
Combine the nut meal, cocao powder, salt and baking powder. Mix through the remaining ingredients.
Pour the mixture into the tin and place in the oven.
Bake for 15-20 minutes or until the slice is set on top. It will remain very soft until it completely cools, particularly if you used coconut oil.
Once it has cooled, feel free to spread your organic, sugar free chocolate spread on top or make your own with cocao powder, coconut oil, vanilla extract and a natural sweetener of choice (coconut sugar, honey, maple syrup, nativia).
Cut into desired sizes and enjoy!
Store in a sealed container in the fridge.
