Instant Mango Ice-cream | 3 ingredients

I’m in North Queensland this week visiting family and can’t help but devour the coconuts, mangos and banana’s whenever I visit. With a bit too much sun from yesterdays boat trip, fresh cold mango ice cream has been an absolute luxury while reading my book and keeping cool today.

Here is the simplest mango ice-cream recipe, using only 3 ingredients and my goodness it’s to die for.

Dairy free, additive free, sugar-free and super healthy.

Recipe:

– 2 mangos, skinned, sliced & frozen

– 1/4 can (100ml) of organic coconut milk

– 2 tsp vanilla extract

Dice the frozen mango into small pieces so it blends easily. In a blender combine the mango (leaving 1/4 cup separate), coconut milk and vanilla until smooth.

Fold through the remaining mango pieces and serve instantly.

For an additional extra try roughly chopped raw walnuts on top.

You can store the ice-cream in the freezer in a sealed container, however it does go slightly ice so fresh is best.

Walnut, coconut and maple pancake smoothie bowl

A soon as I woke up this morning all I could think about was how much I felt like a stack of grain free coconut pancakes with walnuts and maple syrup. Unfortunately I didn’t have time this morning to make pancakes so throwing together a pancake smoothie bowl in 4 minutes became my next best option.

Gluten, refined sugar and dairy free. High in protein, nourishing good fats and oh so very delicious!

Recipe:

1.5 cups organic coconut milk or if using canned coconut milk go half filtered water, half coconut milk

1 handful of activated walnuts

1 heaped tbs maca powder (optional)

1 scoop natural protein powder

2-3 tbs pure maple syrup

1 tsp vanilla extract

Pinch of Himalayan salt

8-10 ice cubes (the more ice cubes the thicker the smoothie)

+ toppings of choice (I used shredded coconut, walnuts and drizzle of maple syrup)

Blend the following ingredients together. Pour into a bowl and top with chosen extras. Now your have time to sit down, relax and enjoy your express pancake smoothie bowl.

Apple, date & coconut health muffins

Imagine a muffin that is gluten/grain, refine sugar and dairy free. Concentrated with wholesome goodness and tastes moist, rich and delicious with beautiful natural flavours.

I just enjoyed the last crumb of one of these magical muffins.

They are perfect way to sneak some goodness into the kids lunch boxes, as a satisfying snack for yourself, or for those of you who struggle with breakfast (although a proper sit down breakfast is always prefered).

Recipe:

– 2 heaped tbs nut butter

– 3 eggs

– 2 tbs honey (optinal)

– 2 cups almond meal

– 1 cup shredded coconut

– 2 heaped tbs LSA (linseed, sunflower seed, almonds ground together)

– 1 tsp cinnamon or to taste (I love lots)

– pinch of salt

– 1/2 tsp baking soda

-1/2 tsp gluten free baking powder

– 1/2 cup chopped dates *

– 1 green apple cored and diced *

Low carb muffins

Pre heat the oven to 180 degrees.

Grease a muffin tin or line with paper muffin wrappers. Not necessary if using a silicon tray.

Mix together the nut butter, honey and eggs.

Add the coconut, almond meal, LSA, baking soda and powder, salt and cinnamon. Once thoroughly combined, fold through the dates and apple.

Spoon the mixture evenly into the muffin tray. Should make 10-12 depending on desired size.

Place in the oven and bake for 15-20 minutes or until lightly brown on top and cooked through the middle.

Enjoy them while they are hot!

To store, allow muffins to completely cool and place in a sealed container in the fridge.

* If using a thermomix, chop dates on speed 7 for 3 seconds, then add apple and chop on speed 5 for 3 seconds.

Strawberry, Coconut Rose Smoothie

This afternoons perfection of flavour combinations! This is my relaxing smoothie because the nourishing coconut and rose essence are so soothing and the strawberries add to the luxurious taste and are full of antioxidant goodness for my body for stress repair.

If you prefer a more coconut creamier texture, use 1 cup of coconut milk and no almond milk.

Recipe:

1/2 cup coconut milk

1/2 cup almond milk

1 cup strawberries

1 tsp rose water

1/2 tsp vanilla extract

1 tsp honey (optional)

4-8 ice cubes

Blend together and serve.

Enjoy!

Strawberry Coconut Bliss Smoothie

This Strawberry Coconut Bliss Smoothie is not only packed with flavour, but also superfoods and nutrients. It is free of dairy and free of refined sugar!

This smoothie contains one of my favourite ingredients, LSA mix. It adds a fuller, slightly nutty flavour, but also contains rich sources of protein, fibre, and good fats!

The smoothie can be made without LSA as well, although it does add that extra nutritional value.

If you want to cut out the LSA, try a tbs of almond meal and a tsp of linseeds and feel free to even throw in some sunflower seeds if you don’t mind the texture!

Strawberry Coconut Bliss Smoothie Ingredients:

– 3/4 cup of milk of choice (I usually use almond)

– 1/2 cup of coconut milk

– 1 tbsp LSA meal (linseed, sunflower seed, and almond meal)

– 1 tsp chia seeds

– 1 handful of organic strawberries

– 1 tbsp maca powder

– 1 scoop of natural vanilla protein powder

– 3-4 ice cubes

Method:

Blend all the ingredients together and pour the smoothie into a glass. For extra flavour, add a swirl of coconut milk, a few sliced strawberries and some coconut flakes on top for decoration!

One of my favourite smoothies to date, this takes just like a dessert, but free of guilt.
