These are so perfect for when you are craving just something small and sweet to go with your cup of herbal tea.
Bite sized healthy muffins that are grain free, gluten-free, dairy free, refined sugar-free and great to add in the transition stage after completing your 14 Day Holistic Metabolism Kick Start.
Tahini is a sesame seed paste similar to peanut butter. It is full of nutrition containing many B Vitamins, calcium and omega’s 3 & 6. Tahini can be found in most supermarkets and health food stores.
Makes about 20 mini muffins.
Recipe:
1 large ripe banana, peeled
2 free range eggs
1/2 cup tahini
1/4 cup honey
1/2 cup coconut oil, melted + extra for greasing the tray
1 tsp baking powder
1/2 tsp cinnamon or extra if you’re a cinnamon lover like myself
2 cups of a nut or seed meal (I used pecan meal, however almond meal, sunflower meal etc can be used)

Preheat the oven to 200 degrees celsius.
Grease the mini muffin trays with coconut oil.
Blend or beat together the banana, eggs, tahini, honey and coconut oil.
Mix through the dry ingredients (baking powder, cinnamon, nut/ seed meal). Now spoon the mixed into each muffin case evenly.
Place in the oven on a middle shelf and bake for 10-14 minutes or until lightly golden.
Remove from the oven, allow to cool and run a knife around the outside of each muffin before removing from the tray.
Store in a sealed container in the fridge for optimal freshness for the next few days.
