When you have a bunch of very ripe bananas next, you must whip together a loaf of this paleo banana bread! Its also great to make and then individually slice, wrap and store in the freezer for a later date!
I only found out recently that banana bread is actually an Australian food!! Did anyone else know that?
The traditional banana bread however is often a base of white refined carbohydrates and sugar. Pretty much the same ingredients as a cake. So don’t let the name fool you into believing the typical banana bread is a healthy choice..
This Paleo Banana Bread recipe is low GI, gluten free, sugar free (only bananas) and the option of dairy free. Making it a healthy and delicious snack or treat!
This recipe was originally adapted from the lovely Merry MakerSisters!
Paleo Banana Bread Recipe!
2-3 ripe bananas, mashed
2 eggs, beaten
3 tbs organic butter or coconut oil, melted
1 1/4 cup almond meal
1/4 cup psyllium husk
1/2 cup LSA (linseed, sunflower seeds, almonds)
1 tsp vanilla paste (or extract)
1 tsp baking powder
1/4 cup rasins
1/4 mixed seeds of choice
Pre-heat the oven to 180 degrees celsius and grease a loaf tin with either extra coconut oil or your organic butter.
In a bowl combine the almond meal, psyllium, LSA and baking powder.
Stir in the eggs, coconut oil or organic butter, vanilla, and banana. Once combined, add the raisins and seeds leaving a few to sprinkle on top!
Pour the mixture into the loaf tin. Sprinkle the left over seeds and raisins and place in the oven.
Bake for 45 minutes or until the loaf is golden brown and springs back when you touch it.
Enjoy either warm or cold or why not try topping with some yogurt and fresh berries!
