A simple bowl of brightness for your eyes, taste buds and health.
Serves 2
Recipe:
3 cups roughly chopped kale leaves
1 carrot
1 small beetroot, peeled
1/2 handful fresh mint leaves
1/2 green apple
Juice of 1/2 lemon
4 rashes short cut bacon
1 tbs coconut oil
1/2 cup raw walnuts
1/2 avocado
2 tbs goats cheese
Hymalayan salt to taste
Grate the carrot, beetroot and apple. Combine together with the lemon juice, salt (approx 1/4 tsp) and roughly chopped mint leaves. Alternately if you have a thermomix combine the carrot, beetroot, apple, mint and lemon juice together for 4 sec/ speed 4.
In a pan on a medium heat melt the coconut oil and fry the bacon for about 2 minutes each side. Slice the bacon into strips.
Toss the beetroot mix through the kale leaves. Top with the bacon, walnuts, sliced avocado and goats feta.
