Stewed Stawberry, Coconut & Chia Seed Slice
The weekend before last some friends took me to Kurtosh. Now if you don’t know about this place it is like cake & slice heaven where you can choose to try as many sweets as you like in tiny proportions. Now while they are not particularly healthy there were the most incredible gluten free options.
Anyway I got inspired to make a slice that was completely Your Holistic Metabolism friendly while you are under going your 14 day metabolism kick start.
Here is a recipe to sweeten your 14 Day Holistic Metabolism Kick Start. All ingredients are Your Holistic Metabolism friendly and these deliciously light slices contain no sugar, gluten, grains or dairy.
So perfect with one of the metabolism boosting tea options on p.38.
– 2 cups of chopped fresh strawberries (frozen can also be used)
– 1/2 cup coconut oil
– pinch of himalayan salt
– 1/4 cup chia seeds
– 5 drops stivia
– 1 tsp vanilla extract
– 1.5 cups almond meal
– 3/4 cup shredded coconut
In a small saucepan stew the strawberries with the coconut oil, salt, vanilla and stivia for about 5 minutes.
In a bowl combine the chia seeds, shredded coconut, almond meal and stewed strawberries. Press the mixture into a tray lined with baking paper and top with extra chia seeds and shredded coconut if you desire. Refrigerate for at least 45 minutes before slicing in squares and enjoying with your cup of tea.
