Pear, Kale & Feta Salad

Light, delicious, wholesome and fresh!!

Recipe:

Dressing:

– Juice of 1 lemon (about 3 tbs)

– 1 tsp dijon mastard

-1 tsp maple syrup

– 6 tbs olive oil

– 1 tsp dried oregano

– pinch sea salt

Salad:

– assorted baby kale and spinach leaves

– 1/2 ripe pear sliced per serving

– feta cheese as desired (preferably goats feta)

Mix 1-2 tbs of dressing through the leaves per serving. Allow dressing to soak in for 10 min before adding the sliced pear and feta.
