Organic tips + Lamb & veggie rissoles
A quick and healthy meal that is perfect for the whole family and great for left over lunches. Gluten free, grain free, clean, wholesome meal!
Many people often ask do I eat only organic and what do I suggest. Really it comes down to money. I try to eat the foods at the top of the food chain (meat, dairy, eggs etc) organic, and then my fruits and vegetables where I can I go organic. Fruits and vegetables with soft skins should always take priority when buying organic. A little trick I learnt that’s second best to organic is to wash and scrub your non organic vegetable in equal parts vinegar and water. This helps wash those water resistant pesticides away. Also take into consideration that many local farmers produce is organic, however they have not certified it as so because of the certification costs. Local farmers markets are great so check out whats available in your area.
I used organic lamb mince, however beef, chicken, turkey mince tastes just as delicious!
Recipe:
– Tray of organic lamb mince
-1 grated carrot
– 1 grated zucchini
– 2 handfuls finely chopped spinach leaves
– 2 organic eggs
– 1/3 cup finely chopped mint leaves
– Celtic salt & pepper to taste
– 1 tsp coconut oil
Mix the lot together and shape into rissoles. Cook in a fry pan with coconut oil.
Serve with a basic salad of mixed leaves, cherry tomatoes, avocado and goats feta.
