Natural Protein Bars
I found this recipe a while ago and have adapted it with each baking. Unfortunately I can not find the original source of the recipe.
This was one of the snacks I pre prepared for my recent snow trip to provide me with nutritious goodness and energy throughout the action packed days.
Gluten free, dairy free, high in fibre and all natural – definitely beats most store bought protein bars.
They are a winner by everyone in my house and those who visit!
Recipe:
Dry ingredients:
1/2 cup quinoa flakes
1/2 cup shredded coconut
2 tbs psyllium husk
2 tbs pepitas
2 tbs sesame seeds
1/2 cup chopped almonds and/ or walnuts
1 tsp cinnamon
1/2 tsp baking soda
Wet ingredients:
2 tbs nut butter
3 tbs honey
1 tbs vanilla extract
2 tbs almond milk
1 mashed banana
Pre heat the oven to 180 degrees. Line a baking tray with baking paper.
Mix all the wet ingredients together in a medium bowl. Mix all the dry ingredients together in a large bowl.
Add the wet ingredients to the dry ingredients and mix thoroughly. If the mixture is to dry add a little more milk, if too moist add more quinoa flakes.
Spread mixture into the tray so slice is about 2 cm thick. Bake for 20-25 minutes or until slice is lightly golden on top.
Allow to cool and then cut into desired bar size.
