Maple Salted Cashews!
Maple salted cashews are a delicious healthy treat or great as Christmas presents, presented in a jar with a ribbon.
I know I know Christmas is still sooo far away, but if the supermarkets and shopping centres are allowed to start their Christmas decorations, then I am allowed to start my Christmas recipes. Plus anything you can pre-prepare before the chaos of December I consider the better. Reduce Christmas stress and allow yourself to relax and enjoy the silly season.
They are also the best used as a smoothie bowl topping. Lots of smoothie recipes here!

Maple Salted Cashews Recipe:
3 cups raw cashews
1 heaped tbs of coconut oil
3 tbs maple syrup
1/2 tsp of a high quality mineral salt (Himalayan, celtic, sea salt).
Heat the coconut oil in a pan on a medium heat. Once the coconut oil has melted add the cashews and simmer for 2-3 minutes, tossing regularly.
For the last minute add the maple syrup and salt, mixing through to cover the cashews. Reduce the heat if needed- caution burnt maple syrup tastes disgusting!!!
Take off the heat and spoon the maple salted cashews onto a sheet of grease proof paper on your bench and allow to cool before placing in a container in the fridge. The cashews will harden once they cool so don’t worry if they are still very soft.
An hour later they will be ready to spoon into a jar, tie with a bow and attach a sweet message….. or you may end up eating them all yourself before you get to this step!
If so, don’t fret. Another batch only takes 5 minutes to make 🙂
