Healthy Black Rice Pudding


As it is starting to get a lot colder in Sydney, warm creamy healthy black rice pudding is the perfect comfort food.

The other week I got back from a morning of very cold, very windy outdoor personal training sessions and needing something warm, soothing and nourishing. I was a bit over my normal oat porridge so started to search the cupboards for inspiration. I had a jar of black rice in the back of the cupboard and it started to occur to me that I could create a healthy rice breakfast pudding!

Black rice is a beautiful grounding, nutrient dense whole food.

According to Forbidden Foods it has been said that in ancient China, Black Rice was amongst a number of foods that were set aside only for the Emperor and the Royal Family due to their quality or health benefits. No one else was allowed to eat these foods without approval from the Emperor. Life threatening consequences occurred to those caught eating these foods without permission.

This recipe can be made as a dessert or breakfast.

It is Dairy Free, Gluten Free, Refined Sugar Free, Nut free, Vegan.

 

Healthy Black Rice Pudding

 

Healthy Black Rice Pudding

1 cup black rice (pre-soaked in filtered water for a minimum of 1 hour or overnight)

1 can coconut milk

1 1/2 cups of filtered water

2x pinches of a high quality salt

1/3 cup coconut sugar

1 tsp vanilla extract

 

Drain and rinse the rice.

In a medium saucepan combine the rice, water, salt and coconut milk. Place a lid on top and bring to a boil.

Reduce to a simmer and leave for 40 minutes while stirring regularly.

The rice should be soft and creamy. If the healthy black rice pudding has absorbed all the liquid, sir in some extra coconut milk or filtered water to create a creamy and moist pudding.

Add the coconut sugar and vanilla and continue stirring on the stove on a low heat until the sugar has dissolved.

Serve the healthy black rice pudding while it is still warm and top with your favourite extras before serving.

For breakfast I had mine topped with coconut yogurt, mango and coconut flakes.
