Fresh beetroot & green bean salad!
Fresh beetroot is an amazing vegetable. It contains powerful antioxidant properties, stabilises your blood sugar levels, lowers your cholesterol and contains high amounts of folic acid. Beetroot further reduces the risk of osteoporosis by helping the body utilise calcium and helps treat anaemia and fatigue with its high iron levels.
It was only recently that I decided to try cooking my own fresh beetroot after previously thinking it was this difficult task. Well I was wrong!! It’s as simple as boiling any other vegetable and then just peeling off the skin once its cooked.
This is such a delicious and easy salad. I served mine with grass fed steak, however you can serve it with any other meat or throw some chickpeas or quinoa through it for a vegetarian alternative.
Recipe:
– 1 cooked fresh beetroot cut into wedges
– 1 large handful of cooked green beans, top & tailed and cut in half
– Goats feta cheese
– Pine nuts
– Dressing:
1 tbsp olive oil
1 tbsp apple cider vinegar
1/2 teaspoon crushed garlic
1 tbs lemon juice
1 heaped tsp pesto
Toss all the ingredients together and its ready to serve!
Easy as that.
