Deluxe Chocolate Granola- gluten free!



The best way to explain this recipe is like adult coco pops that are 100% healthy.  All the ingredients make up a perfectly nutritious deluxe breakfast, snack or even dessert. Also great as a gift in a jar wrapped with a ribbon or perfect for on the run in a smaller jar with milk (doesn’t go soggy).

There is a few variations on how you can prepare the ingredients. The more steps you complete in preparation the greater the health benefits of the granola. If your in a rush and want to make it instantly,  not a problem! Activating and sprouting the ingredients allow the nutrients to become more available for you body to absorb and digest, however they are still great for you if you don’t go through these processes.

To make the recipe nut free, leave out the almond butter.


1.5 cups of dates, soaked

1/4 cup almond butter

3 tbs cocao powder

2 tsp vanilla extract pinch salt (preferably Himalayan, Celtic salt)

1/3  coconut oil, melted

1/4 cup maple syrup or honey

1 1/4 cup sunflower seeds, activated (see below)

3/4 cup pepita seeds, activated (see below)

3 cups buckwheat groats, activated & sprouted (see below)

1/2 cup hemp seeds 1 tbs cinnamon

*To activate the seeds & buckwheat soak them in filtered water overnight with 1 tsp Celtic salt or 1 tbs apple cider. Drain and rinse thoroughly the next day.

*To sprout the buckwheat, once it has been activated, place it in a colander, spreading it around the edges and leave it with a damp tea towel over the top. Rinse 2 times a day. You will see little tails sprouting off the buckwheat after 1-2 day. Usually takes 3 days, depending on the humidity.

Preheat the oven to 150 degrees.

Make a paste with the dates and almond butter in a blender/food processor. Now add the coconut oil, maple syrup, vanilla, salt, cinnamon, and cocao powder to the paste and blend for a few seconds.

Scoop the mixture into a bowl and mix in the buckwheat and hemp, pepita & sunflower seeds. Spread out on 2 trays lined with baking paper and bake for about 30 minutes or until, mixing around every 10 minutes.  The granola will feel soft still. Leave to cool out of the oven for 10 minutes, while the granola hardens.

Enjoy as a snack by itself, sprinkled over yogurt or a smoothie, or with cold milk ( almond milk goes perfectly) and fresh fruit.
