Cleansing Green Chicken Noodle Bowl


Cleansing green chicken noodle bowlI know I say it a lot but with every meal or snack there is an opportunity to nourish your body with goodness. I love creating food that allows me to take in concentrated nutrition and that will have healing and/or cleansing affects on my body. Our bodies deserve the best!!

So what will this meal do for our health?

Well firstly its packed with green leafy goodness- a nutritional powerhouse for our eyes, heart, skin, cholesterol, energy production, bone health, protection of cells + more.

Secondly mushrooms are full of antioxidants, immune boosting properties, are great for our metabolism and a good source of B vitamins and essential minerals.

Garlic, lemon and fresh herbs will have our body ridding itself of toxins and further strengthening our immune system.

Coconut oil and its healing properties, chicken as a great source of lean protein and an alternate noodle/ fettuccine for wholesome goodness = one very happy body.

Serves 4  gluten free

Recipe:

3x chicken breasts, roughly sliced

1 bunch broccolini, cut in half

3 cups chopped mushrooms

1/2 lemon

5 handfuls of baby spinach

2 cloves garlic, finely chopped

2 tbs coconut oil

1 handful of fresh basil leaves(can use flat leaf parsley instead)

1 tbs of homemade/ good quality pesto

1 packet of alternate fettuccine or noodles (spelt, black bean, wholegrain, brown rice, spinach etc)

Himalayan salt and pepper to taste

Cook the noodles/fettuccine as outlined by the packet instructions.

Steam chicken peices (about 9 minutes or until cooked through but still tender) and broccolini (about 5 minutes). I used my thermomix, however another form of steaming or lightly frying in 1 tsp coconut oil over medium heat works just as well.

In a large fry pan on medium heat melt coconut oil and saute garlic. Add the mushrooms and cover with a pot lid to keep in the moisture for about 3 minutes. Mix through the pesto, salt, pepper & basil.

Toss through the fry pan the chicken, broccolini, spinach leaves, noodles/fettuccine and juice of the lemon. Once the spinach leaves have slightly softened, take the pan off the heat and serve.
