Chai latte coconut custard!
I recently removed my much loved occasional coffee from my diet. Other than the fact coffee was creating huge fluctuations with my blood sugar levels, it was weakening my adrenal system and I reached the point where my body instantly rejected even a couple of sips. It was too difficult to completely cut out the social cafe routine that I looked forward to so much, so I had to come up with a healthier alternative to my soy latte. This is what started my new found obsession – the chai latte!!
My next problem however was that many places added large amounts of sugar to the mix or they contained corn syrup (highly addictive). I now have picked out the cafe’s in my area that do not include these ingredients and have mastered my own home made chai latte.
Last night after dinner I was searching through my piles of paper bags containing all sorts of healthy goodies from ‘The source bulk foods’ (my food shopping paradise) and picked up a bag of Indian spice chai tea and then coconut sugar and cocao nibs. What started as searching for a little snack, became inspiration to invent a chai latte custard with coconut and cocao nibs.
Well I must say it has been one of my best inventions yet, even my fussy, junk food obsessed partner couldn’t refuse a taste of this healthy dessert!
I buy most my ingredients from The Source. Its convenient, eco friendly, cost efficient and has so much variety for a healthy diet and those with food allergies. The ingredients with an asterix were purchased at The Source.
– 1 cup almond milk
– 1 cup organic coconut milk + extra for serving
– 3 teaspoons of chai tea leaf mix (I used Indian spice chai tea)*
– 1 tbs of raw honey or desired amount *
– 1.5 teaspoon vanilla extract
– 1 egg
– 1 tbsp arrowroot powder mixed in 2 tbsp warm water
– Coconut flakes*
– 1 tsp coconut sugar*
– 1 tbsp cocao nibs*
Place tea, 1 cup coconut milk and 1 cup chosen milk into saucepan. Bring to boil and then leave on low heat for 4 minutes.
Drain tea and add 1 egg into the warm milk, continuously stirring of heat. Add arrowroot liquid and place back on low heat stirring until milk thickens.
Take off heat & add honey and vanilla.
Pour custard half way up glass, add a drizzle of coconut milk, and sprinkle of coconut sugar. Fill the rest of the glass with custard and then decorate with coconut milk, coconut flakes, coconut sugar and cocoa nibs.
Enjoy this deliciously healthy dessert and have a go making your own chai latte!!
