Broccolini & Bacon Side
An easy and tasty side dish containing lots of detoxifying and metabolism boosting properties.
Perfect as a side with grilled chicken/ fish/ steak or tossed through cooked quinoa or brown rice for a healthy take to work lunch.
Also great with pine nuts and goats cheese.
Recipe:
2 bunches of broccolini, halved
5x rashes of short cut bacon, sliced
5x large handfuls of baby spinach leaves
1 tbs coconut oil
1/2 lemon
Cayenne pepper
Hymalayan salt + pepper to taste
Pre heat the fry pan & melt the coconut oil. Lightly fry the bacon for 2 minutes before adding the broccolini.
Toss through the juice of the lemon, and 1/2 tsp cayenne pepper (or more/less depending on taste preference- warning HOT!!).
Lastly add the baby spinach leaves, tossing until they wilt and season with the salt & pepper.
Add any extras or serve as a side.
