Baked Avocado Eggs


Super easy and nutritious breakfast, full of omega goodness. Throw together and let it bake in the oven on week days while your getting ready or enjoy on a relaxed Sunday morning while reading the paper or sharing with family and friends.

This breakfast will have your insides and outside glowing with health!

Baked Avocado Eggs



– 2 eggs

-1 avocado

– celtic/ himalayan salt + pepper

– desired toppings- fetta cheese, herbs, diced tomato, bacon, diced mushroom, salsa.


Preheat oven to 220 degrees.

Cut the avocado in half and remove the stone. Scoop out about 1-2 tbsp of avocado to make a deep hole for the egg.

Place the avocado’s in a baking dish and carefully crack open the eggs into each hole. Sprinkle with toppings and salt & pepper to taste and place in the oven. Bake for approximately 15 minutes.

Enjoy by itself or with sautéed spinach leaves and/or a piece of gluten free bread or healthy bread alternative.
